Serves 10Ingredients
Chicken Thigh (De-bone, de-skin, cut cubes) – 10 thighs
Dried Chili – 20 sticks
Garlic (De-skin only) – 2 bulbs
Spring Onions (cut into small sticks) – 2 stalks
Sauces
Light Sauce – 5 table spoons
Dark Sauce (sticky good quality) – 5 table spoons
Sesame oil – 5 table spoons
Oyster sauce – 3 table spoons
Chinese Hua Diao wine – 5 table spoons
Sugar – 8 table spoons
Black vinegar – 3 table spoons
Pepper – Desired
Steps
- Season Chicken Cubes with the above Sauces, set aside for 4 hours;
- Use a sieve to drain the Sauce from the Chicken Cubes. Set aside the Sauce;
- Heat work, big fire, add oil, stir fry Garlic and Dried Chili till fragrant;
- Maintain big fire, add Chicken Cubes stir fry for 15 minutes;
- Turn to medium fire, add Sauces, half a bowl of water and Spring Onion sticks and stir fry for 10 minutes;
- Add corn-starch to thicken the gravy;
- Serves hot, goes well with boiled rice.
