Serves 10Ingredients
Fish head (Song or Mackerel) – One each
Fish meat (sliced) – 1 kg
Plain flour – Desired
Pepper – Desired
Salt – Desired
Seasoning
Garlic – 8 cloves
Ginger slice – 8 slices
Spring Onions (cut, small long piece) – 3 stalks
Dried chili (cut, piece) – 5 sticks
Star Anise – 8 each
Sauce
Sugar – t table spoons
Light Sauce – 5 table spoons
Dark Sauce – 5 table spoons
Sesame oil – 2 table spoons
Water – Desired
Steps
- Cut fish head and meat into pieces. Season with pepper and salt and coat with corn flour for 10 minutes;
- Heat wok, add oil, medium fire, deep fry fish head and slices of fish meat till golden brown, put aside;
- Heat wok, add oil, stir fry Other Ingredients for 10 minutes;
- Add deep fried fish head & meat pieces, desired Sauces. Turn to small fire and simmer for 15 minutes until gravy becomes sticky;
- Add shallots last for fragrance;
- Goes well with boiled rice.
