Medium Tiger Prawn – 20 each
Salted Eggs – 4 each
Garlic (chopped, fine) – 4 table spoons
Ginger (chopped, fine) – 4 table spoons
Spring Onion (chopped, medium fine) – 5 sticks
Sauces
Light Sauce – 3 table spoons
Sesame Oil – 5 table spoons
Sugar – ½ table spoons
Pepper – Dashes
Steps
- Boil salted eggs, de-shelf and chop into very small cubes;
- Cleans prawns, use scissors to cut away the legs, antennas and rostrum (sharp-pointed blade on top of the eyes). Do not de-shelf;
- Heat wok, big fire, add cooking oil, stir fry chopped garlic & ginger. Add prawns and all Sauces, stir fry for 4 minutes.
- Maintain big fire, sprinkle some water, put in chopped salted eggs and stir fry for another 1 minute ;
- Garnish with Spring Onion;
- Serves hot, goes well with boiled rice.
