Grey Mullet – 1 each (1kg)
Fine salt (for cleansing) – Desired
Sauces (for steaming)
No sauces required
Steps
- DO NOT scale the fish when cleansing;
- Remove the fish gills and clean the fish stomach; leave fish fat in stomach intact;
- Season fish stomach and exterior with fine salt for half an hour;
- Rinse the fish, drain dry, put onto a steaming plate;
- Heat up wok with big fire, add water, when boiled, steam the fish for 7 minutes;
- Turn off the fire, do not open lid, keep for another 3 minutes before serving;
- Serve with plain rice;
- Taste excellent if you dab fish meat and fish fat with light sauce!
